Daniel Boulud has recently settled a discrimination lawsuit brought on by Latino and Asian workers at his flagship restaurant Daniel who claimed they were passed over for promotion in favor of white employees with less experience and seniority. Such discrimination is unfortunately widespread in metropolitan areas, so all the blame cannot be placed on Boulud; however, in an age when diners are concerned about the provenance of the butter on their bread plates or the diet of the kobe beef they’ve chosen for their entree, such social malaise should not be discounted as irrelevant to the dining experience.
