Now that the days are warmer and summer has announced itself, the lovely view of the garden is transformed into a delightful dining terrace where guests enjoy a panoply of lighter dishes in the garden amongst nature as we know it in New York, and with the help of the staff's welcome, as we know it in the country.

Accompanying these dishes is an impressive array of local Gascon wines. And the extensive cartes des Armagnac is an undeniable find! After dinner, custom dictates that satisfied guests enjoy a glass of one of 1966's best bottles. And, a growing number are reviving the custom of savoring these precious Armagnacs at the bar with one of their favorite cigars.

On many levels, the numerous evenings I have enjoyed at Gascogne are best described as "unpredictable." Their common denominators are clearly the meticulousness with which I am served and the wondrous dishes laid before me.
